Eats Breakfast, Collingdale, Pa

With plent of left overs from our Taco party last night, we decided to make a mexican, meets american inspired breakfast. Some eggs over easy, on top of a corn tortilla with cheese, cilantro, fage plain yogurt (replaces sour cream) and some tabasco chipotle hot sauce. To go with our feast, we made some banana pancakes, veggie sausage and hashbrowns. And a breakfast isn't complete without a bottomless glass of mimosa. Serious YUMMERS!
